Step by step we show you the techniques that belong to every Italian celebration meal: shaping and filling a bread, rolling pasta by hand, and stuffing and rolling meat. The two of us cook alongside you, in a small group, telling you where each recipe comes from – from Cilento, from Basilicata, from Puglia.
The course is open to everyone and no experience is needed. You are very welcome to come with friends, family or colleagues.
These wonderful recipes await you:
- Insalata russa – the classic that appears on every Italian festive table: potatoes, carrots and peas finely diced and bound in a creamy dressing
- Enriched bread with olives, sun-dried tomatoes and walnuts, shaped by hand from a sourdough starter that Grazia keeps and brings with her
- Capunti – rustic pasta rolled by hand, from Valentina’s native Basilicata, with a sauce of sausage, mushrooms and a touch of white wine
- Bombette pugliesi – thin slices of pork filled with cheese and pepper, rolled by hand into small parcels; a speciality of the Valle d’Itria in Puglia
- Fennel and orange salad with olives and good olive oil – the fresh note that is never missing from an Italian festive table
- Panettone with mascarpone cream – Grazia’s panettone, risen over two days with her own sourdough starter, with a traditional mascarpone cream, and coffee
You also take home a printed recipe collection with every dish we cook together.
At the table there is Italian red wine, along with water and coffee.
